About Cold Chain Food Safety:
To maintain food safety, an unbroken “cold chain” is required between the production, transport, storage and distribution stages of all temperature-sensitive foods. Successful cold chain management depends on keeping foods cool enough to prevent bacterial growth that can lead to food poisoning.

Foods not kept at or below 40°F. (about 4°C.) can spoil quickly by allowing foodborne microorganisms to grow uncontrolled. Spoiled food may not look or smell rotten so these senses are generally thought of as being unreliable to judge the safety of a particular food item. If you doubt the safety of any food, do not consume it.
